Roasted Carrot Hummus

I know, I know . . . another hummus.  But I eat a lot of hummus . . . like practically everyday.  If I had to make a food pyramid, I think hummus would be an actual food group.  Now, you can see that variety is key when eating so much hummus.  I can not simply eat just the classic hummus we all know and that I do indeed love.  I need to switch it up, spice it up and mix it up into a whole plethora of hummus combinations.



So today it is Roasted Carrot Hummus!  Most of my hummus combinations are made because I have a particular ingredient on hand.  The other night, I had leftover roasted carrots that I put into a container and placed in my refrigerator.  Well, lunch rolls around and I decide it is time to turn those leftover roasted carrots into something or simply eat them. Shockingly, I was out of hummus so as you can probably guess I made hummus with my carrots.  It is so simple to make hummus.  Ingredients plus a food processor . . . blitz away and there you have hummus!

Roasted Carrot Hummus

1 cup cooked chickpeas

1 cup roasted carrots

1 lemon juiced

2 Tbsp almond butter

sprinkling of ground cumin (optional)

Blend everything until smooth  . . . EAT!





Yes, it was so easy because I had everything on hand.  Love days like that!  I want to inspire you to make things from fresh ingredients, from seasonal ingredients and ingredients you already have in your kitchen.  Hummus flavors are endless . . . if you have sun-dried tomatoes and fresh basil then that is your hummus, if you don’t have chickpeas but instead have cannellini beans well then that is your base, if you have an extra baked sweet potato . . . you get the idea.  Don’t let ingredients stop you but rather inspire you.  Look at recipes especially simple ones like hummus just as your guide.  If you don’t have tahini but instead have peanut butter or sunflower seed butter then by all means substitute.  Yes, it will be different but it will be your own.  Create like a child and be wowed by your results.

I am suddenly dreaming of a Cranberry Hummus . . . oh yummy!  Something to make with Thanksgiving leftovers!!
