Lemon Cilantro Pesto from CLEAN START by Terry Walters
1 1/2 cups fresh cilantro
1 garlic clove, peeled
3 tablespoons pine nuts
1 1/2 tablespoons lemon juice
3 tablespoons extra virgin olive oil
1 teaspoon lemon zest
1/4 teaspoon sea salt
Place all ingredients in a food processor and puree until combined. Transfer to a bowl and allow flavors to blend.
Lemon Cilantro Pesto has been drizzled over my roasted string beans, added into my quinoa salad with roasted bell peppers, dolloped my sun-dried tomato risotto and taken my mayo to a new level. Where will it show up next? Maybe slathered over a piece of roasted corn-on-the-cob . . . oh my, I simply can’t wait!
