I am back . . . as promised! And not without a delicious recipe. I said I would share with you a Kelp Noodle recipe . . . and share I will! The simplicity makes it brilliant, the taste makes it sensational and the health benefits make you feel fabulous! Now, that is meal to embrace!
This is so easy . . . it’s ridiculous! I can’t really call it a recipe . . . but I will. Yes, this is a recipe for Thai Kelp Noodles. But let the truth be told . . . you are only blending together a dressing. The rest is purely a semblance of ingredients. At the end, you have a springtime meal that was easy, delicious and healthy . . . gotta love a meal like that!
And like I said, “it’s healthy” . . . what a bonus! This meal is perfect for springing into the season . . . haha! Let’s just take a quick moment to look at a few key ingredients to this meal . . . shall we? Kelp is a sea vegetable that is packed with vitamins and minerals. It contains sea iodine which works with our thyroid to help us increase our metabolism and balance our weight. Almond butter is high in monounsaturated fats, calcium, potassium, iron and manganese. Also it is a good source of riboflavin, phosphorus and copper and an excellent source of vitamin E, magnesium and fiber. It provides dietary protein which supports a vegetarian diet. Coconut oil is full of good fats that work with our thyroid to help us increase our metabolism and lose weight. It is also said to help get rid of stretch marks on our skin . . . the magic fatty food! Throw in some citrus, veggies, a spice, some herbs and mixed greens . . . wow, a bowl of superfood!
Thai Kelp Noodles
1 bag of Kelp Noodles
soak for about 20 minutes in warm water, drain and then set aside in a bowl
2 tablespoons almond butter
1/3 cup coconut oil
1 tablespoon soy sauce
1 teaspoon coriander powder
1/2 red chili pepper
2 teaspoons lime or lemon juice
1/3 cup water
Blend all dressing ingredients in a blender, pour over Kelp Noodles and voila . . . you have Thai Kelp Noodles!
I love to serve them on a pile of fresh spring greens and add handfuls of fresh cilantro, mint and basil . . . Absolutely Delicious!
