At least, I am falling in love with this salad . . . and that is why I am sharing it with you! Roasted sweet potatoes cooked in olive oil, maple syrup, coarse sea salt and dried chili flakes . . . can I say more? Should I? Well, I will . . . because I can, I must! A crisp apple that adds fresh crunch to a salad. Dried red cranberries which are the perfect balance between tart and sweet with a chewy texture. Salted pecans adding the right amount of dry crunch and nutty richness to deepen everything. All of this goodness to be piled on . . . peppery arugula. Are you falling in love yet? Well, if not, than you will with your first bite. And with each bite, your love for this salad will deepen! Now, that’s a lot of love . . . for a salad. Confession . . . I love salads! This is the thing . . . salads aren’t side dishes for me. No way. Salads are MEALS . . . on their own! And this salad can definitely stand on it’s own . . . be front & center stage!
This salad is all about balance . . . exactly why it is so lovable! It is the right amount of sweet, salty, spicy matched to crunchy, chewy, rich salad goodness! A Salad To Fall In Love With . . . This Fall!
2 medium sweet potato, diced & *roasted
1 apple, crisp and fresh, cored and chopped
2 large handfuls arugula, coarsely chopped or torn
1/3 cup dried cranberries
1/2 cup roasted & salted pecans
*Roasted Sweet Potatoes . . . easy to make. First, wash your sweet potatoes. Then, cut them into a uniformed dice. Line a baking tray with parchment paper and spread out your diced sweet potatoes. Simply drizzle olive oil & maple syrup over all and toss until evenly coated. Sprinkle with coarse sea salt and red chili flakes. In a preheated oven of 200C/400F roast until done. I like mine to be a bit caramelized so I leave in for about 25 to 30 minutes.
*I like this rich dressing because it feels “fall-like”!
2 tablespoons balsamic vinegar
2 tablespoons olive oil
2 tablespoons finely diced red onions
1 tablespoon maple syrup
1 tablespoon dijon mustard
Put everything in a glass jar, screw the top on tightly and shake away!
Assemble salad, drizzle on just some of the dressing because you can add more if you need, toss and serve immediately!
