Surprise Salad . . . Toasted Pecan and Fresh Blueberry Red Quinoa Salad!

A new year and a new salad . . . Surprise Salad!  This salad is exactly that.  It’s a surprise waiting . . . no begging, tempting you to take a first bite.  A first bite that you will be hoping doesn’t end.  Because somewhere in the madness of this salad is delicious success!  Yes, success tossed into a delicious bowl of fresh ingredients.  Really, what type of salad combines parsley with fresh blueberries and pecans with mustard?  Answer, of course, this salad because that is the surprise of it all.  The surprise that these ingredients end up working a sort of magic and each bite gets better and better.  Savory ingredients meet sweetness in the shape of a perfect blueberry.  Deliciousness!  The only little sad truth is this bowl of goodness gets eaten all up.  And what are you left with?  Yes, an empty bowl . . . to clean.  But no worries . . . you can always toss together another surprise salad on another day!  That’s the good thing about surprises . . . each time you make this salad you will be surprised!
So what are you waiting for?  Why hesitate?  I get it . . . you are thinking maybe this salad has got to much going on.  But that is the beauty of it.  It is a rainbow of colors, a party in a bowl, a whole meal in a salad, a delight for your senses!  Should I get the music going now?  This salad will make you dance!  It is a bowl of deliciousness with the power of superfoods to fuel you right through your day!  Come on . . . pecans, blueberries, quinoa, parsley, mesclun and lemon.  Need I say more?  Oh, but I will . . .
Pecans . . . are an excellent source of manganese and a good source of protein and unsaturated fats.
Blueberries . . . have a diverse range of micronutrients, with moderate levels of the essential dietary mineral manganese, vitamin C, vitamin K, a source of dietary fiber and considered a low glycemic food.
Quinoa . . . is a gluten free food, a good source of protein, dietary fiber, phosphorus, calcium and high in magnesium and iron.
Parsley . . . is a source of flavonoid, antioxidants (especially luteolin), apigenin, folic acid, vitamin K, vitamin C and vitamin A.
Mesclun . . . contains vitamin A, vitamin C, beta-carotene, calcium, folate, dietary fiber and phytonutrients.
Lemons . . . contain citric acid which aids digestion and dissolves kidney stones, are an excellent source of vitamin C and contain a variety of phytonutrients.
You get it . . . super ingredients mixed all together.  But the taste?  Just trust me on this . . . I am kinda like a salad whisperer!  You are going to love it, I just know.
Ready to get into the kitchen?  YES!!  Let’s start tossing together a big bowl of Toasted Pecan and Fresh Blueberry Red Quinoa Salad.

Toasted Pecan and Fresh Blueberry Red Quinoa Salad
1 cup dry red quinoa
2 cups water
salt & pepper
3 tablespoons extra virgin olive oil
juice & zest of 1 lemon
1 tablespoon whole grain (honey) mustard
1/2 cup toasted pecans
1/2 cup fresh blueberries
small bunch of fresh parsley, roughly chopped
mesclun salad greens
Bring water to a boil.  Season water with a good pinch of salt, add red quinoa and simmer for 20 minutes.  Allow to cool.
Pour red quinoa into a bowl.  Add olive oil, lemon juice, zest, mustard, pecans, blueberries, parsley and toss.  Season to taste.
Ready to serve . . . place mesclun salad greens onto plates and top with Toasted Pecan and Fresh Blueberry Red Quinoa Salad!
