Holidays are all about decadence, right? At least the food always seems to be extra rich, extra heavy, extra fattening . . . gross! Well, I probably shouldn’t have said gross but I did. Don’t judge me . . . even though, it’s true, I am judging holiday food. So go ahead, judge me. I can take it. I am just saying that the holidays can simply weigh you down. And then everyone declares that in the new year they are going to detox, lose a few pounds, get in shape . . . we all know the drill. But why? Why does it have to come to this? Resolutions . . . really?
So, I am here to help . . . just like a good friend should. Yes, everyone should enjoy the yumminess of holiday food. Deprivation . . . never a good thing. But are you really enjoying the holidays when your pants are squeezing you just a wee bit too tight? My point exactly! It’s all about moderation . . . and yes, self control. Here’s an idea . . . instead of eating the whole tin of xmas cookies maybe, just maybe put on your skinny jeans, turn the xmas carols way up high and have a real xmas dance party! And yes, eat a cookie or two . . . just not the whole tin. See, I am not so mean after all.
In order to have some balance on the holiday table, it is important to offer some lighter dishes. And what screams lightness on a holiday dinner table? I have an answer . . . something raw, something veggie, something yellow. Yes, sunshine in a bowl! Here’s a recipe that will not only perk up your taste buds but give your mood a boost too! It’s a crispy, marinated . . . Golden Fennel Salad!
Fennel bulb is a favorite of mine. Fennel has a fresh, licorice-like flavor, crisp bite and a slightly sweet after taste. It is an onion-looking bulb with celery-like stalks sticking out of it and feathery fronds on the ends. If you have never tried it . . . now is your chance. Turmeric is the spice that gives this salad it’s golden hue. But honestly, turmeric gives this salad much more than just color . . . it simply turns this salad from healthy to superfood sensation! We all can use a superfood sensation boost especially during the holidays!
Golden Fennel Salad is a raw fennel salad paired with a creamy tahini, sweet maple, citrusy lemon, hint of garlic and plenty of anti-inflammatory turmeric powder dressing . . . now that’s a mouthful of healthy yumminess!
Golden Fennel Salad
1 large fennel bulb
1 small purple onion
1 tablespoon tahini
3 teaspoons pure maple syrup
1 small lemon, juiced
1 teaspoon turmeric powder
1/8 teaspoon garlic powder
salt & pepper to taste
Thinly slice the fennel bulb and onion and place in a glass bowl.
In a glass measuring cup, add all the dressing ingredients and whisk together.
Pour dressing over salad and toss well so everything is evenly coated.
Place fennel salad in the refrigerator for at least an hour or longer to marinate before serving.
