Summer Bruschetta . . . Wild Peach, Heirloom Tomato & Avocado!

Summertime calls for easy, light and vibrant meals.  Yes, summer is the season of ease!  And the beauty of summer is the abundant selection of delicious fruits and vegetables available for all of us to enjoy!  So what should a girl do when she arrives home with wild peaches, heirloom tomatoes and avocado?  Answer . . . time to make a sensational Summer Bruschetta!

I truly believe summer meals should be simple.  Simple is Summer.  Make this bruschetta for your next hot summer evening . . . it will be perfect!  Add a huge leafy salad and a cold glass of white wine . . . Summer!   

Summer Bruschetta

1 cup of heirloom baby tomatoes; halved

drizzle of olive oil

drizzle of white balsamic vinegar

2-4 wild peaches; diced

1 small avocado; diced

fresh basil leaves

sea salt & fresh ground pepper

crusty loaf of bread

Toss tomatoes, peaches, avocado with oil, vinegar, salt & pepper.

Toast  thick slices of bread, top with mixture and add basil.
