OK, so you are all wondering what is she talking about . . . smokeable hemp or edible hemp? Of course, edible hemp and more specifically hemp in the form of hemp seeds. Hulled hemp seeds are considered a superfood and for good reason. Hemp seeds are a vegan, gluten-free, sugar-free, trans-fat free, cholesterol free whole food that will only leave you “high” on nutrition! As a protein source, hemp seeds contain all 20 amino acids including the 9 essential ones making them a complete protein. Something not easy to always find in the plant kingdom . . . let me say “powerhouse seeds”! Hemp seeds are a perfect source of essential fatty acids (EFAs) omega-3 and omega-6. It’s ratio of EFAs is an ideal 3:1 ratio known to reduce inflammation in the body, improve circulation and possibly reduce food cravings. Hemp seeds have both soluble and insoluble fiber. These little hulled seeds also deliver a dose of vitamins and minerals which include A, B1, B3, B5, D, E, iron, magnesium, trace minerals and chlorophyll. WOW! And it simply doesn’t end there. Hemp is one of the oldest grown crops in the world and not just any old crop but a sustainable crop. So by loving your hemp seeds, you are loving the Earth too!
So you are all ready to run out to the store and buy a bag. Good!
And later . . . home with your bag of hulled hemp seeds. What to do? Easy! Simply add them to everything. A scattering on top of a morning bowl of oatmeal, mixed into a midday yogurt snack, sprinkled on top of an evening side salad. Get crazy and blend them into hemp milk. Bake them into your cookies, pancakes, muffins, scones . . . really any baked good! These little seeds will deliver a solid dose of added nutrition to any meal or snack . . . now that is a good thing!
I seem to always have a glass jar of hulled hemp seeds on hand. I mostly use them as an “additional ingredient” to an endless number of meals. Maybe being so tiny, they seem to make their way into so many things in my home and many times undetectable. Mostly, they are found in my baked goods and scattered through my salads. But I have never used them as a main ingredient in a recipe . . . a star!
Maybe you already know, I am an absolute salad lover! Really, I can eat a large bowl of green leafy salad any and every night of the week. I just love my salads. I tend to be a vinaigrette girl. But I every so often would like something a bit more creamy to dress my greens. It is chillier now and I am loving roasted veggies in my salads. I thought I would like a dressing with a bit more body. I had to look no further than the blog known as Oh She Glows by Angela Liddon. She has endless vegan recipes that will WOW you . . . and possibly just make you GLOW!
So, last night I made her Ultra Creamy Hemp Salad Dressing and wish to share it with you too!
1/2 cup hulled hemp seeds
1/2 cup water
2 tablespoons nutritional yeast
2 tablespoons fresh lemon juice
1 clove garlic
1/4 teaspoon fine grain sea salt
Blend all the ingredients on high until smooth and creamy.
Store in a glass jar in the fridge. It should thicken up a bit and last at least a week . . . if you don’t lick it up quicker!
My dinner was a salad of roasted butternut pumpkin, little gem lettuce, red, orange and yellow baby tomatoes, chunks of avocado, grated carrot, diced red onion, purple sprouts all dressed with Ultra Creamy Hemp Salad Dressing . . . and an additional sprinkling of hulled hemp seeds, of course! May I just add, this salad was “high” on taste and nutrition!
To being simply “high” on yumminess . . . one little hulled hemp seed at a time! Hugs, M.
