Cucumber Mint & Dill Salad . . . perfect for the heat of summer!

The Cool Cucumber!  Yes indeed, the cucumber is certainly cool . . . at least, in the cooling sense.  Made up of 95% water, one clearly realizes that they are indeed super hydrating.  And who doesn’t need some extra hydrating in the heat of summertime?  Add a few slices to all your meals . . . extra slices atop your sandwiches, a diced handful scattered in your salad.  Hey, add slices into glasses of cold water . . . adding hydration to hydration!  Or make a deliciously, cool Cucumber Mint & Dill Salad!

So why are cucumbers often over looked . . . never really in the spotlight?  With all their amazing health benefits, it’s time for the cucumber to jump on center stage.  I guess it’s true . . . the cucumber is so cool it simply can chill out!

Cucumbers are a widely cultivated plant within the gourd family Cucurbitaceae.  It is a creeping vine with cylindrical fruits but considered a culinary vegetable.  The two main varieties include slicing and pickling cucumbers.  Grown most everywhere, they originated in Southern Asia.

But let me tout some of the Benefits of Cucumbers . . .

Cucumber Mint & Dill Salad

10 mini or 3 medium cucumbers

1/4 cup chopped red onion

1 teaspoon chopped fresh dill

1/4 cup fresh mint leaves, torn

Coarse sea salt

2 tablespoons extra virgin olive oil

1/2 teaspoon pure maple syrup

1 teaspoon lime juice

Cut cucumbers into bite-sized pieces.  Place in bowl with onion, dill & mint.

Whisk together oil, maple syrup & lime juice.  Drizzle over cucumbers and season with salt.

Serve . . . enjoy the coolness of cucumbers!
