Summertime screams picnics, for me! Pack up the basket with food, jump on the bike, ride to a perfect destination, spread out the blanket and viola . . . Picnicking Season has begun!
Well, I have the perfect summer slaw that yes, screams PICNIC! It’s creamy, sweet, sassy, crunchy, super nutritious, and doesn’t spoil. What? Yes, you read that correctly . . . It doesn’t spoil. Why? Well, because it is dairy-free!
Do you remember that carrot salad from the grocery store deli? Yes, that one! Oh yes, the one full of mayo, shredded carrots, a scattering of raisins and then more mayo. It was less than good. Ok, that was a complete lie. The brutal truth . . . it was disgusting, at best. Time to change all that. The carrot deserves a better slaw! Of course, it does! Let’s move forward and move upward . . .
Time for a new carrot salad for your summer picnics . . . Creamy Carrot Summer Slaw! Crunchy, sweet, vitamin A rich carrots are the star ingredient. Forget raisins and add in some tart, dried cranberries for intense flavor and bright color. Creamy tahini makes for a slaw that is both rich and savory while keeping everything dairy-free. And then simply boost up this slaw to superfood status with the addition of curry and turmeric powder. Now, you have created a go-to carrot slaw for summer!
Creamy Carrot Summer Slaw
2 cups julienned carrots
1 Tablespoon pure maple syrup
1 Tablespoon tahini
1/3 cup dried cranberries
1/2 teaspoon curry powder
1/4 teaspoon turmeric powder
1 Tablespoon apple cider vinegar
pinch of pink himalayan salt
grind of fresh black pepper
Add all ingredients to a large mixing bowl.
Toss salad until carrots are infused with wet ingredients and spices have been evenly dispersed.
Can be eaten right away for a crunchy texture or allowed to sit and marinate for a softer more infused flavor . . . both delicious!
I added this slaw as a topping on my sandwich . . . divine!
As a quick and light dinner, I added this slaw to a plate of arugula and topped it with sauteed tofu cubes . . . so yummy & easy! Sorry, no picture . . . ate it up just a wee bit too fast!
