California Dreaming . . . all tossed into an early Fall salad!


It’s early Fall and this girl is simply doing a little California Dreaming!  So, I might not be walking on the beach, the sunbeams aren’t quite as bright, the air isn’t filled with the smell of eucalyptus and my skin isn’t glistening with warmth . . . but just let a girl imagine.  Maybe try some imagination too.  If I quiet myself enough, if I close my eyes just a bit longer . . . yes, I might just get there.  Even if only in my dreams . . . it’s my California Dreaming.  And I like it there!

Today was just a typical early Fall day.  Somewhere in this day some grocery shopping needed to be done.  Walking through my market, I was inspired by the fresh produce.  My basket started to be filled up with Fresh Figs, Avocados, Blackberries, a bag of Pistachios and a bunch of Arugula . . . and My California Dreaming Fall Salad was born!


My California Dreaming Fall Salad

a simple semblance of these fresh ingredients tossed with your favorite vinaigrette . . . it might just cause you to dream too!

a bunch of arugula, washed & spun dry

a fresh fig per person, sliced

a handful of blackberries, rinsed and patted dry

thick slices from a ripe avocado

as many pistachios as you can de-shell

vinaigrette . . . I served my salad with a Maple Syrup Balsamic Dressing.

It was a gorgeous salad . . . a California Dream Come True!  And not only did it taste delicious . . . it was packed with nutrition.  Check it out . . .


Arugula . . . a low calorie vegetable loaded with health benefits.  A rich source of phytochemicals, a very good source of folates, an excellent source of vitamin A and K, rich in B-complex group of vitamins, good source of vitamin C and contains adequate levels of minerals, especially copper and iron with small amounts of  electrolytes.

Fresh Figs . . . are abundant in natural sugars, minerals and soluble fiber.  They are rich in minerals including potassium, calcium, magnesium, iron and copper and are a good source of antioxidant vitamin A and K.

Blackberries . . . contain anthocyanins which give them their glossy, dark color and it is a powerful phytonutrient.  It has been shown to protect the brain from oxidative stress and thought to reduce the effects of age-related conditions such as Alzheimer’s disease and dementia.  Blackberries are also thought to help fight against cancers of the GI tract.

Avocados . . . are a good source of fiber, potassium and vitamins C, K, folate and B6.  

Pistachios . . . are an important source of protein, fats and minerals.  They are a rich source of phyto-chemical substances, an excellent source of vitamin E, packed with important B-complex groups of vitamins, contain an abundance of minerals like copper, manganese, potassium, calcium, iron, magnesium, zinc and selenium.

You can also add some smoked chicken to make a more heartier meal . . . or some tofu or some fresh goat cheese.  Lots of opinions so start dreaming up a salad that is uniquely yours!
