A springtime sandwich . . . Cucumber Mint & Dill with Maple Wasabi Mayo!

I simply don’t know . . . what I am loving more?  Is it the spring weather or this spectacular springtime sandwich?  Well, I am not going to pick one or the other.  Oh no!  Instead I will simply choose both . . . and preferably together!  Yes, I will enjoy this sandwich while sitting in the sunshine and warmth.  Every bite will be deliciously spring-like.

After winter, who doesn’t love, I mean really just love, Springtime?  The shedding of everything winter.  It is both physical and emotional . . . at least for me.  Springtime is . . . lighter in so many ways.  No need for the heavy coats, scarves, hats and gloves.  Getting out of the house seems almost . . . effortless!  And meals become lighter too.  With a greater abundance of fresh produce available, meals became simple.  For me it is all about simple and fresh.  And of course, taste!

Let’s get into the kitchen and make a sandwich that is spectacularly spring-like . . . simple, fresh and ever-so tasty!  And don’t let it’s simplicity fool you.  Because you will be so surprised at how something so simple will wow you!  Your first bite will do exactly that . . . yes, wow you!  And your last bite, will be begging for more.  Good thing it is a simple sandwich . . . enough time to make another!

A springtime sandwich . . . Cucumber Mint & Dill with Maple Wasabi Mayo!

2 slices of bread (I used a whole grain spelt bread, but it is your sandwich and your choice!)

organic english cucumber (as many thin slices at you like)

fresh mint leaves

fresh dill

Wasabi Maple Mayo (or should I say . . . secret sauce)

1 tablespoon mayonaise

1/2 teaspoon pure maple syrup

1/2 teaspoon wasabi paste

*plenty of secret sauce for more sandwiches . . . and believe me, you will be making more!

Stir together the ingredients for the mayo.  Slice the cucumbers and gather the herbs.

Spread a thin layer of mayo on both slices of bread.  Layer the cucumber slices on one piece of bread.  Next, add a layer of mint and dill. Top with second piece of bread and slice in half.

Take your first bite . . . Wow!  Something so simple . . . is so very spectacular especially in the warmth and sunshine of spring!
