A Day at the Beach . . . ending with Tacos!

After a day at the beach, nothing is better than a taco dinner.  It just feels so summery!  And honestly, I don’t even wish to write much because . . . I am just dreaming of summer nights and more tacos!  I just hope to inspire you to have your very own Taco Night.  It really is great fun . . . because everyone fixes their own taco just the way they like it.  So make it super fun, super healthy, super easy and super summery!

Roasted Salmon Tacos with Wild Peach Salsa & Mashed Avocado

Not really a recipe but more a concept mixed up with fresh & healthy ingredients riding on a summertime vibe . . . which in my opinion makes it a Party!  So chill some beers and get your summer playlist going . . . cause it is going to be a Taco Party tonight!

My Method for Roasted Salmon Fillets:  I roast my salmon fillets on high heat, 500F/250C, to get a lovely bit of crust.  I add a small amount of olive oil, sea salt and fresh ground pepper.  Cooking for approximately 8 to 10 minutes depending on thickness.  Also, it is important to remove fish from oven before center is completely opaque to avoid overcooking.  You want moist salmon not dry.

Wild Peach Salsa:  4 wild peaches; diced and put in a bowl.  Add in about 20 small tomatoes that have been diced too.  I used yellow cherry tomatoes and both orange & red grape tomatoes . . . just because I love color.  For more color, I added finely chopped purple onion; about 1/2 of a small one.  Can’t forget the green . . . so a handful of torn fresh cilantro gets mixed in too. What about some heat?  Yes, in goes 1/2 of a red chili finely minced.  Squeeze fresh lime juice and some zest.  Lastly, to enhance the taste add a pinch of sea salt and a grind of fresh black pepper before you toss it all together. Voila!

Making Mashed Avocado:  Simple . . . mash up a whole avocado with a dash of salt & pepper and a squeeze of lime.  If you are feeling a bit more fancy,  why not add something more?  Options:  minced garlic clove, chopped spring onions, minced jalapeno or red chili, fresh corn kernels, any spices or herbs you like, finely chopped mango or pineapple, etc.

Time to warm up some corn tortilla shells in the oven, set the table, refill your drink, try out a new dance move . . . or two!  Now we are talking . . . Taco Party Night!  Hey, a party even during the week . . . loving it!

And for dessert, big chunks of fresh pineapple . . . remember bathing suit season is here too!
